Our €50 menu

On Monday, Thursday and Friday lunchtimes (and Saturdays on request), you can opt for the €50 menu at our gourmet restaurant in Reims. This menu is made up of several dishes. First of all, the menu includes amuse-bouches and, more specifically, a smoked salmon mousseline. Next, you’ll have the privilege of savouring a soufflé of St-Pierre, drizzled with an old sherry vinegar sauce. After this starter, we’ll continue with a free-range chicken roasted in its skin and accompanied by a celery risotto with Parmesan cheese. For dessert, we’ll treat you to a hot chocolate with almond milk. Mignardises are also available.

Our 155 euro menu

This €155 menu is available every day, for both lunch and dinner. It begins with amuse-bouches: crab, celery emulsion and smoked salmon mousseline. This is followed by a gourmet trilogy including blue lobster with pear in a sweet and sour vinaigrette, blue lobster, cauliflower and citrus semolina, and half-cooked warm Normandy salmon with caviar.

The next course is a sea bass and scallops served with a pink berry sauce and a Marennes d’Oléron oyster. After that, you can enjoy a fillet of Alsatian venison with a blackcurrant sauce. For dessert, we’re planning a pineapple confit with citrus peel, avocado and toasted coconut. A coconut sorbet and coulis will be served alongside. Finally, you’ll be served mignardises.

Our Crustacean menu at 185 euros

The Crustacean menu is only available on order, 24 hours in advance. If you like shellfish, we highly recommend it. The menu begins with an amuse-bouche. Then we’ll serve you a lobster with pear in a sweet and sour vinaigrette, as well as a lobster with citrus cauliflower semolina. Then you’ll have the pleasure of tasting langoustines marinated in caviar.

Your meal will continue with scallops and lobster. Next, you’ll have the privilege of savouring langoustine ravioli with carapace juice. The last savoury dish is a lobster cooked in a shell with semi-salted butter and a lobster sauce with trumpets. As for dessert, it will consist of a crunchy raspberry chocolate mousse, served alongside a raspberry sorbet. You’ll also be served mignardises.

Our Truffles menu at 235 euros

Do you love truffles? If so, don’t hesitate for a second and order the truffle menu, which is available from December to March, by prior arrangement only. In any case, this menu gets off to a great start with surprise truffles in fine gold and foie gras.

Next, you can enjoy a celery risotto with fresh truffles, served with a truffle cream. Then, our gourmet restaurant in Reims will serve you a raviole of langoustines, truffles and foie gras sauce.

After that, you’ll continue with an exceptional dish: sole with semi-salted butter and truffles, served with a mousseline purée with fresh truffles. A truffle en croûte with Périgueux sauce and a brie de Meaux with truffles will complete the menu.

Dominique Giraudeau

Dominique Giraudeau’s passion for cooking goes back to his childhood. Working alongside his father, he discovered the pleasure of going to the market. One thing led to another, and Dominique went on to discover the world of cooking, putting his talent to good use in a number of renowned restaurants. In particular, he worked for several years at Les Crayères, a gastronomic restaurant in Reims that you may well know. Now at the helm of Le Grand Cerf, his aim is to offer French cuisine that combines tradition and modernity.

Pascal Champion

Pascal Champion joined Le Grand Cerf in 1998 and is the other head chef at our gastronomic restaurant in Reims. He brings all his expertise and know-how to the restaurant, creating refined, creative dishes that are still rooted in tradition.

Brigitte Giraudeau

Max Bernard Mantch
